Online Cooking Class | The Great Green Lunch: Meal Prep For the Whole Family

If you’ve been following my Instagram, you’ve probably seen my daughter's school lunches. I get so many requests for the recipes and wanted to share a few that have been highly sought after.

In this cooking lesson, we’ll make hemp pesto, a high-protein, nut-free, school-safe pesto that everyone in my house loves! We’ll also prepare edamame, which can be used both as a quick lunchbox protein and as part of hearty veggie and rice teriyaki lunch bowls, that we’ll make together.

Finally, we’ll make Green Monster Cookies—one-bowl oatmeal chocolate chip cookies that are kid- and adult-approved. This recipe is high in fiber, lower in sugar, and nut-free (and can easily be made gluten-free if desired). In class, you’ll learn about the secret ingredient that causes these cookies to turn green while baking!

All recipes are vegan, can be modified to be gluten-free, and are nutritious, delicious, and loaded with plants!

No matter where you live you can join me in real time and we can cook together (or you can just observe) from our respective kitchens! The live virtual class takes place on Sunday, January 19 @4:00 pm ET and will take approximately 1.5 hours from start to finish.

You’ll receive the recipes, grocery list and zoom login info in advance of the class. In the live class you can ask questions and learn new cooking skills while you're watching. The class is recorded and you’ll receive the recording following class.
